Roasted eggplant, pumpkin and capsicum salad with chickpeas, fresh coriander and honey sesame dressing

Fresh asparagus and snowpeas tossed with semi-dried tomatoes, sliced mushrooms and baby bocconcini, finished with a basil garlic dressing

Moroccan cous cous salad with toasted slivered almonds, currants, lemon zest and finely chopped coriander topped with warmed marinated chicken tenderloins

Thai Beef salad with bean shoots, snow peas, red pepper strips finished with a lime dressing and chopped peanuts
